Hyderabad’s traditional sweet dish, Best Kaddu ki Kheer, is made with bottle gourd. Bottle gourds are preferred over pumpkins in Hyderabad. Kaddu ki Kheer Ingredients.

  1. 1. Sago Pearls (soaked) – 1/4 cup (60 grams)
  2. 2. Bottle Gourd – 250 grams 
  3. 3. Cashews – 2 tbsp
  4. 4. Sugar – 1/2 cup (100 grams)
  5. 5. Milk – 1 litre
  6. 6. Cardamom – 4-5
  7. 7. Pista Flakes – 1 tbsp
  8. 8. Almond Flakes 2 tbsp

How to make Hyderabadi Kaddu Kheer?

Heat a liter of full-cream milk to a boil over high heat. Grate 250 grams of bottle gourd, being careful to use a thicker bottle gourd for maximum pulp. Set aside the bottle gourd’s center and soft section.

Stir the milk continuously until about 3/4 of it is left. Although khowa is used to produce kheer, we are not utilizing it in our preparation. Meanwhile, roast the bottle gourd while the milk thickens.

With a medium flame Grated bottle gourd should be added to a skillet with 1 tsp of ghee and cooked for 3–4 minutes under cover to soften it. While this is going on, the milk thickens and stays 3/4th; add 1/4 cup of soaked sago pearls and cook for 10 to 12 minutes.

Continue to stir the milk until the sago pearls become clear. Now stir thoroughly after adding the roasted bottle gourd. Stir in 2 tablespoons of cashew nut paste, little by little. Reduce the heat to low and add five cardamoms. Peel and grind them into a powder.

Once the kheer has thickened and has an appealing flavour, stir in 1/2 cup sugar and 1 tsp almond flakes. Once combined, extinguish the flame. 4.–5. Minutes later, serve the kheer.
